Indian Bhel Puri
Ingredients: Bhel Puri
Recipe
  • 50g sev
  • 50gms coarsely crushed paapri
  • 100g phuliyan, parwal or puffed rice
  • 1 tsp chilli powderr
  • 1 tsp chaat masala
  • 1 small onion, very finely chopped
  • 2 tbsp finely chopped raw mango
  • 2 green chillis, deseeded, finely chopped
  • 2 garlic cloves, very finely chopped (adjust to liking)
  • 1/ 2 c finely chopped coriander leavess
  • juice of 1 lemon
  • tamarind chutney
  • mint chutney
  • salt to taste
Method:
  1. In a bowl, mix all the ingredients together well.
  2. Adjust the chilli powder according to taste.
  3. Serve immediately in individual plates.
Green Peas Dhokla
Ingredients:
  • ½ cup Bengal gram flour (besan)
  • ½ cup green peas, boiled
  • 1 teaspoon ginger-green chilli paste
  • 1 tablespoon powdered sugar
  • ½ cup water
  • ¼ teaspoon citric acid (crystals)
  • ¾ teaspoon unflavoured fruit salt
  • salt to taste
    For the tempering
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds (rai)
  • 2 green chillies, finely chopped
  • a pinch asafoetida (hing)
  • 1 tablespoon water
    For the garnish
  • 1 tablespoon chopped coriander
  • 1 tablespoon grated coconut
  1. Puree the green peas to a smooth paste using very little water.
  2. Add all the other ingredients to the green pea paste and mix well. Add a little water, if required to get a dropping consistency.
  3. Pour into a 150 mm. (6") diameter and 25 mm. (1") high greased microwave safe dish with a lid and microwave on HIGH for 3 minutes covered.
  4. Remove and let it stand for 2 minutes.
    For the tempering .
  5. Combine the oil and the mustard seeds in a small microwave safe bowl and microwave on HIGH for 2 minutes. .
  6. Add the green chillies and asafoetida and microwave on HIGH for 1 more minute. .
  7. Remove from the microwave and add 1 tablespoon of water.
    How to proceed
  8. Pour the tempering over the dhoklas and cut into square pieces.
  9. Garnish with the chopped coriander and grated coconut and serve hot with green chutney.
Quick Kheer
Recipe
  • 500 ml Milk (Doodh)
  • 250 gms Rice (Chawal)
  • 200 gms Sugar (Cheeni)
  • 50 gms Ghee
  • 3 tblsp chopped Nuts
Method:
  • Pick and wash the rice.
  • Soak in water for 30 minutes.
  • Drain completely.
  • Melt the ghee in a pan, add the drained rice and saute for 5-7 minutes on a medium flame.
  • add the milk and cook on a low flame till the milk is reduced to 3/4th its original quantity.
  • Add the sugar and simmer further till the milk is reduced to half its original quantity.
  • Garnish with nuts.
