Garlic Bread
Ingredients: Garlic Bread
Potato Recipe
  • 1 1/8 cups water
  • 2 tbsp olive oil
  • 3/4 tbsp finely minced garlic or garlice paste
  • 3 cups white bread flour
  • 2 tbsp sugar
  • 1 1/2 tsp salt
  • 3 tbsp grated parmesan
  • 3/4 tsp sweet basil
  • 3/4 tsp garlic powder
  • 2 tbsp dried/chopped chives
  • 3/4 tsp coarsely ground black pepper
  • 2 tsp fast rise yeast or 2 tsp active dry yeast

Method:
  1. Add ingredients according to the manufacturer's instructions.

  2. Set your machine for the Rapid, Delay or White cycle and start.

  3. For the best flavor, serve this bread warm.

Breakfast Ham Focaccia
Ingredients:
  • 1 (12-inch) round or square focaccia (Italian flat bread), split horizontally
  • 3/4 cup mascarpone cheese (3-ounces)
  • 2 tablespoons finely chopped bottled roasted red sweet peppers
  • 2 teaspoons snipped fresh rosemary
  • 6 large eggs
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1 tablespoon butter
  • 16 slices cooked ham, thinly sliced
  • Asiago Cheese Sauce (recipe follows)
  • Snipped fresh rosemary or parsley (optional)

Method:

  1. Preheat broiler. Broil cut sides of focaccia until toasted. Remove from broiler.

  2. In a small bowl, combine mascarpone cheese, roasted peppers and rosemary. Spread some of the mascarpone mixture on each half of the focaccia. Cut each half of the focaccia into 4 wedges or squares.

  3. Meanwhile, with a whisk or fork, in a medium bowl, beat eggs, water, salt and pepper together until combined. In a 10-inch skillet, melt butter over medium heat. Pour egg mixture into skillet. Cook, without stirring, until mixture begins to set. Cook for 4 to 5 minutes more or until eggs are cooked through but still moist, lifting and folding often to assure eggs cook evenly. Remove from heat; keep warm.

  4. To assemble focaccia, broil cheese-topped wedges or squares for 2 minutes. Top each with 2 slices of ham and some of the scrambled egg mixture. Spoon some of the Asiago Cheese Sauce over each wedge or square. If desired, garnish with additional snipped rosemary or parsley.
    Makes 8 servings.
  5. Asiago Cheese Sauce: In a small saucepan, melt 1 tablespoon butter over medium heat. Stir in 1 tablespoon all-purpose flour, 1/8 teaspoon salt and 1/8 teaspoon pepper. Stir in 1 cup half-and-half or light cream. Cook and stir over medium heat until thickened. Cook and stir for 1 minute more. Stir in 3/4 cup grated Asiago cheese until melted. Makes about 1 1/4 cups sauce.
Crusty Italian Bread
Potato Recipe
  • 1 1/3 cups water
  • 1 1/2 tsp salt
  • 1 tbsp granulated sugar
  • 1 tbsp shortening
  • 3 2/3 cups bread flour
  • 1 1/4 tsp bread machine yeast
Method:
  • Measure ingredients into the baking pan ( the manufacturer may recommend the order ). Insert the pan into the oven chamber and select the Dough Cycle.
  • Remove and place the dough on a lightly floured surface. Cover it with a large bowel and let it rest for 10 to 15 minutes.
  • Divide the dough in half ( if the dough is sticky at this stage, flour your hands and add a small amount of flour to the board; too much flour, however, can result in a tough, heavy texture ).
  • Form each half into a loaf measuring 10 by 4 by 2 inches. Flatten the top slightly.
  • Place the formed loaves onto a baking sheet dusted with cornmeal.
  • Cover and let rise in a warm and draft-free place for 30 to 45 minutes, or until they double in volume.
  • Bake at 400 degrees F ( 200 degrees C ) for 20 to 25 minutes, or until the loaves sound hollow when tapped on the bottom.
