Cocktail-China Town
Ingredients: China Town
 
  • 1 measure sake
  • 1/2 measure Martini Bianco
  • 1 measure passion fruit juice
  • 1/2 measure litchi or mango juice
  • Dash lemon juice
  • Dash peach syrup
Method:

Mix the ingredients in a shaker and shake well for 30 seconds.
Serve over ice with a slice of lemon.

Cocktail- Habano Mexico
Ingredients:
  • 1/6 pastis
  • 1/6 vanilla liquer
  • 1/6 banana liquer
  • 1/3 orange juice
  • 1/3 white rum

Mix the rum and orange juice in a cocktail shaker, then add the rest of the ingredients and shake well.
Serve over ice.

Cocktail- Caribbean quail
 
  • 80g raisins
  • 8 dressed quail
  • 120g basmati rice
  • 4 small bananas
  • 4 slices bacon
  • 4 teaspoons sesame seeds (or toasted sunflower seeds)
  • 1 pinch ginger
  • 2 onions
  • 2 pinches desiccated coconut
  • 1 pinch paprika
  • Salt & black pepper
Method:
  1. Soak raisins in warm water.
  2. Season birds, then steam for 15 minutes.
  3. Wash rice in a sieve, then put in a pan and cover with water to 5cm above top of rice.
  4. Bring to boil, then cover and turn heat down, simmer for 20 minutes without removing lid.
  5. Peel bananas, roll each one in a slice of bacon and secure with a cocktail stick.
  6. Brown in a frying pan.
  7. Chop onions, then saute.
  8. Wash and strain raisins, then mix into cooked rice.
  9. Add sesame seeds, ginger, coconut and paprika.
  10. Serve quails on a bed of rice, with the banana in bacon alongside.


    Advice :
    Cook quails in oven at 400°F (210°C), wrapped in kitchen foil to retain juices
