Cauliflower -Cauliflower Cake recipe
Ingredients: Roasted cauliflower
Cauliflower Recipe
  • 4 oz (100 g) fresh breadcrumbs.
  • 200 ml (1/3 pint) milk or white stock.
  • 2 tbsp (25 g) 1 oz butter.
  • 1 cauliflower, cooked and divided into florets.
  • 2 eggs, separated.
  • salt.
  • pepper.
  • 2 tablespoons browned breadcrumbs.
  • parsley, or tomatoes and grated cheese to garnish.
Method:
  1. Put the fresh breadcrumbs and milk or stock in a saucepan and stir over a low heat until the mixture boils and thickens.
  2. Stir in the butter and cauliflower. Remove from the heat and mix in the egg yolks, salt and pepper.
  3. Whisk the egg whites and fold into the cauliflower mixture.
  4. Grease an 18 cm (7 inch) plain mould or cake tin and coat it with the browned breadcrumbs.
  5. Spoon in the cauliflower mixture. Place the mould or tin in a roasting tin of hot water and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 to 40 minutes or until well risen and firm to the touch.
  6. Turn out onto a warmed serving dish and garnish with parsley, or tomatoes and grated cheese.
Cauliflower Recipes-Broccoli and Cauliflower Casserole
Ingredients:
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 1/2 to 2 pounds of broccoli and cauliflower pieces
  • milk
  • 4 to 5 tablespoons butter
  • 4 tablespoons flour
  • salt and pepper to taste
  • dash nutmeg, optional
  • 2 tablespoons fine dry bread crumbs
  • 1 to 2 tablespoons grated Parmesan cheese
  • 1/8 teaspoon paprika

Method:

  • In a large saucepan, bring water and salt to a boil. Add broccoli and cauliflower; cook just until crisp-tender. Drain cauliflower, reserving liquid. Add milk to the vegetable liquid to measure 2 1/2 cups.
  • Turn vegetables into a shallow 2-quart baking dish.
  • Melt 3 tablespoons of butter in the saucepan over medium heat. Blend in the flour, stirring until smooth and bubbly. Gradually stir in milk mixture.
  • Cook, stirring constantly, until thickened and smooth. Season with the salt, pepper, and nutmeg. Pour sauce over broccoli and cauliflower. Dot with remaining 1 to 2 tablespoons of butter. Combine bread crumbs, Parmesan cheese, and paprika; sprinkle over vegetables. Bake at 450° for about 20 minutes, until casserole is bubbly.
  • Serves 4.

Batter Dipped Deep Fried Cauliflower
Cauliflower Recipe
  • 1 Head cauliflower, washed and broken into bite-size flowerets.
  • 2 Eggs, beaten.
  • 1 Tablespoon milk.
  • 1/4 Teaspoon salt.
  • 1 1/2 Cups flour.
  • 2 Tablespoons shredded parmesan cheese.
  • 1/4 Teaspoon garlic powder.
  • 1/2 Teaspoon dried thyme.
  • 1 Teaspoon dried oregano.
  • 1/8 Teaspoon paprika.
  • 1 Dash cayenne pepper (use more if you like spicy stuff).
  • 1/4 Teaspoon black pepper.
Method:
  • Preheat fryer oil to 375.
  • Beat an egg and place it in a shallow bowl with the milk and salt.
  • In another bowl mix together the flour, cheese, garlic powder, thyme, oregano, paprika, cayenne and pepper.
  • Place flowerets into egg mixture and toss them to coat well.
  • Place the mix in to the flour mix and toss well.
  • Deep fry in batches for 4-6 minutes or until they are golden brown.
  • Drain on paper towels and lightly salt.
  • You could serve with dipping sauces such as marinara, ranch or blue cheese.
