Corn Recipes-Pickled Corn Relish
Ingredients: Pickled Corn Relish
Recipe
  • 8 cups corn (16 to 20 ears)
  • 3 cups cabbage, finely chopped
  • 2 large onions, chopped
  • 2 large sweet green peppers, chopped
  • 2 large sweet red peppers, chopped
  • 1-1/4 cups sugar
  • 2 tablespoons flour
  • 1 tablespoon salt
  • 2 teaspoons turmeric
  • 2 teaspoons celery seed
  • 4 cups vinegar
  • 2 cups water
Method:
  1. Blanch the corn (on the cobs) for 5 minutes, then let cobs cool. Cut the corn from the cobs and place the kernels in a large skillet. Add the remaining ingredients and simmer for 20 minutes. Pack the boiling-hot relish into hot, clean pint jars, leaving 1/4 inch of headspace.

  2. Run a rubber spatuladown around the inside of each jar to remove air bubbles. Adjust the lids and process at 10 pounds of pressure for 1 hour, 35 minutes.

  3. Store the sealed jars in a cool, dry, dark place for at least six weeks before serving. Makes about 6 pints.

Ingredients:
  • 4 Or 6 cobs of corn
  • Salt and pepper
  • Sugar
  1. Add milk or a small quantity of lemon juice to the water for corn, bring to a boil, put in the ears of corn, boil up well, then set on the edge of the stove to draw for 20 minutes.
  2. Salt, if added, should be put in after the corn is cooked, as it toughens the kernels and turns them a red color.

  • 1 c Ketchup
  • 2 tb Brown sugar
  • 1 ts Dry mustard
  • 1/2 ts Salt
  • 1 sm Onion; chopped
  • 3 c Fresh corn
  • 3 sl Bacon; diced
Method:
  • Preheat oven to 350°. Grease a 1 1/2 quart casserole.
  • Mix ketchup, brown sugar, dry mustard and salt; stir in remaining ingredients, except bacon, until well blended. Top with bacon; transfer to casserole and bake until bacon is cooked and heated through, about 40 mintues.
  • Makes 6 to 8 servings
