Corn Recipes-Creamy Sweet Corn
Ingredients: Creamy Sweet Corn
Recipe
  • 2 C. fresh or frozen corn
  • 1/4 C. half and half
  • 2 T. butter
  • 1 T. sugar
  • 1/2 tsp. salt
Method:
  1. In a saucepan combine all ingredients.

  2. Bring to a boil over medium heat.

  3. Simmer, uncovered for 6-8 minutes till heated through.

  4. Serves 4

Corn Recipes- Yankee Rarebit
Ingredients:
  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • salt and pepper to taste
  • 1/4 teaspoon dry mustard
  • 1-1/2 cups milk
  • 2 cups whole-kernel corn
  • 3/4 cup shredded sharp Cheddar cheese
  • 8 slices toast or crackers
  1. Melt the butter or margarine in a skillet. Blend in the flour, salt, pepper and dry mustard.

  2. Add the milk and corn.

  3. Stir constantly over low heat until the roux has thickened. Add the cheese and continue cooking until it has melted, stirring occasionally.

  4. Serve on toast or crackers.

  5. Serves 6 to 8.

  6. Optional: For an early spring treat, place cooked asparagus on the toast before topping with the rarebit.

Corn Recipes- Corn Chowder Recipe
Recipe
  • ½ can corn
  • 1 pint sliced potatoes
  • 2 tablespoons butter
  • 1 onion sliced
  • 1 pint of milk
  • ½ teaspoon salt
  • 1 cup water
Method:
  • Cook the onion in the double boiler in one-half the butter for twenty minutes.
  • Add the sliced potatoes and one cup boiling water.
  • Cook directly over the flame until the potatoes are tender.
  • Add the corn, milk and the remainder of the butter.
  • Heat to the boiling point, add the salt, and serve hot over crackers.
